I am very much a metal working rookie here. So with the plasma cutter how much do I need to worry about the doors warping during cutting? I know the welding Dave has recommended others to do what I believe is called blind welding spots to help prevent the warping, but the cutting also has me curious..

Jeramy, morning...  Pull the torch as fast as it will cut... use the hottest setting and let her rip....  I put a straight edge where I will make the cut so I can cut fast and straight....

Leave the corners attached and maybe the middle in one or two places until everything cools back to ambient then finish the last of the cuts.... No problem...  Those notes are just to be on the safe side... warped doors are a PITA as you can well imagine....

Weld the hinges in place before the final cuts.... On the hinge pin location, allow for the door seal overlap.....

Nice view with the flag standing tall.... I'm also in the process of building my 49 Willys Pickup. I will be keeping it original... I decided to get the RF built first because our son will be
