Well after having my smoker for two weeks and coming across a good deal on pork butts I invited some friends and family over for my first try at smoking a butt. My butt started out at 7.75 lbs and was generously rubbed with McCormicks pork rub and injected with a healthy amount of apple juice. My Brinkmann smoker was fueled with original Kingsford charcoal with hickory chips added. I smoked my butt at 250 degrees for 5.5 hours spraying it with apple juice every half hour. When it reached 165 degees I foiled it and let it remain in the smoker until the IT was 205. Afterwards the butt rested for an hour, it was pulled and served with a home made sauce on the side.
