I am wanting to try some my first ever BB ribs this weekend. I was at the store tonight and I asked a guy at the meat counter if they had fresh ribs that they prepared themselves or just the cryo packed ones. All they have is the cryo packed ones so I decided to take a look. Nothing jumped out at me as something I was drooling over to eat. I am hoping some of the experienced rub cookers here can tell me what I need to look for when buying ribs.

I get mine at SAMs or Costco and they always turn out great. I got expensive bb ribs at a high priced butcher once and they did not taste any better. Don't forget to trim em up first though!

Nothing wrong with Vac-Pac ribs. Just look for, " All Natural ", on the package. Some " Enhanced " ribs are injected with a Brine that makes the finished Ribs Salty or taste like Ham. This may not be a bad thing, just not what people want when they got a taste for BBQ Ribs...JJ

there has to be a butcher around you. it's worth the trip. sometimes you have to look around as well. one Butcher by me is twice the cost of one 2 miles further away.

I don't mind looking around at other stores and butcher shops, but I still would like to know what to look for once I get there. I may try Sam's just to see what they have and if anything catches my eye. I wasn't turned off from the cryo pack ribs because of the packaging, but more because it is difficult to see the meat under the labels. Some looked like there wasn't much meat and others seemed really fatty.

the places by me trim the BB very close. sometimes i get "shiners". where you can see the rib bone with no meant on it. can't always avoid it by me. i envy some of the thick BB i see on here. the cryo vacs i see look brown. i like the see nice fresh color from the butcher.
