Does anyone have a picture that shows how to make the foil tent over the AMNPS? This past weekend I made some BB ribs in my MES 30 using the AMNPS and it just didn't stay smoking. I had the chip drawer open, the side chip adder open and the top vent all the way open. I did have water in the pan and I didn't tent the AMNPS. I ended up having to use chips. I plan on smoking a butt next weekend so I'd like to see a picture of the tent and ask - if I don't use water will my butt be dry? Also, is it better to just take out the chip adder rather then just opening it?Thanks Linda
 
You may find Nuking the Pellets for 60 seconds will help Dry them in humid areas. Adding the loaded AMNPS while you Pre-heat your smoker helps as well. I have found lighting the pellets throught the Hole and from the Bottom does a better job of getting a good bed of lit pellets to keep things going. The Chip Loader out 2" and the Chip Drawer out 1" is a good start, for the first hour, but I have found closing the Loader, leave drawer alone, gives a longer smoke time. I have removed the Loader thinking more Air is better but the Pellets burned faster and actually Ignited...Fire Bad!!! I don't use water in the pan and have not needed to tent the AMNPS, I use disposable drip pans. Dave Omak should be along, he has a neat wire support for a foil Tent...JJ

DO NOT use water in the water pan

There's waaaay too much surface area of water in the pan, and it produces too much steam.  This excess steam not only affects the AMNPS, but also condenses on the inside walls of your MES, and can cause a big mess.

I've used water in my water pan 1 time and that was enough!

Your pork butt will not dry out if you do not use water in the water pan.

Inject your pork butt, and place a drip pan directly under your pork butt, to catch the drippings.  Save these drippings, skim off the fat, and add them back into your pulled pork.

Linda, morning.....  Todd's suggestions are compiled from years of data from users....  His advice is well worth the time to follow... 

Several folks have designed "tents" for their smoke generators... the one I came up with is fairly easy and seems to stay together... Using wire that fits in the holes of the AMNPS, I bent them into arches and place a sandwiched layer of foil on top...  I use heavy foil and fold it twice so there are 4 layers of foil....

Here is a fair  picture of the wire supports....

The wire is SS TIG welding rod ...  anything will work ... I had it and it fit the holes....

Thanks everyone and thanks David for the picture of your tent.  I bet I could do that with a wire hanger since I don't have and SS TIG welding rods laying around.  Ok...no more water!  Makes sense to me.
