I am a Newbie, have been smoking using my Masterbuilt XL for about a year.  Loaded it up this weekend.

Dutch's Wicked Beans

Oneshot's ABT's

3 racks of spares trimmed to St.Louis  3-2-1 method

3 racks of baby backs 2-2-1

apple/cherry

apple juice/kraken rum mix on the sprayer-  sprayed ribs every hour other than when wrapped

Overall very happy with the results.  Still have some baby backs that get a little too mushy and will adjust time foiled next time.  However the wife likes them fall of the bone so no complains from her.  I purchase my ribs from Sams Club in a 3 pack and noticed that the 3 racks vary in weight and thus this affects how they come out. 

Want to try no foil method in the future and I am open to ideas for no foil from you more experienced smokers.  Thanks for viewing.

Great looking chow! I do not foil my ribs any longer but in the old days before my xl...when I use to just grill them...I wrapped and cooked them for about 2.25hours @ around 250. Great taste but that was without the even better smoke flavor. Guess it is just a matter of trial and error...but that is what makes it fun!
