It's been awhile since I tried another Pastrami, but there was some CBB at the bottom of the freezer just asking for it!! So I pulled him out & let him defrost.
It was 2.5 LBS so just barley enough for ME! Soaked in water for 6 hours with 2 changes. Here's how it came out.
Rubbed with just the small pickling spice packet & a lite coating of coriander
Then a good coating of pepper
Smoked for almost 6 hours at 240-250 with apple & hickory until i got an IT of 175
Put him in the fridge over night to mellow & tighten up!!
Like I said, just enough for me!! Turned out AWESOME!!! Much better than my first attempt & will be smoked more often now!!!
