I am in Bangkok, Thailand.

Due to my location and the costs to ship a smoker here, with added taxes and the chances of it getting dented or maybe malfunctioning... i started to search for any local made equipment.Thailand is not renowned for the "smoky" flavor of it's food, as it is not really a cooking style they use. Finding a local Thai manufacturer or even someone selling imported stuff was proving fruitless.

Then i stumbled onto a company owned by a nice American guy who has retired out here, he and his wife make mostly SS BBQs, but they recently started making a smoker.

Due to the fact they are a small family run company, and not some mass producer, they are flexible about what they can make... which of course has had me making plans for my Ultimate Smoker!

So far the spec will look like this roughly

* Stainless: 304 Stainless
* Doors: 2
* Height: 90cm (36")
* Width: 52cm (20.5")
* Deep: 43cm (17")

The width and depth of the machine has changed from his original spec so that i can use the Stainless Steel wire racking shelves i have in my TSM Stainless 5 Tray Dehydrator. Meaning i can take a tray of Jerky and stick it into both the Smoker and the Dehydrator.

In combination to changing the size of it, i am also going to do some modification to it to allow me to reduce the temps inside the cabinet while Cold Smoking, as the ambient temps here day and night are >80. I will use something like a Smoke Daddy, A-maze-N or the UK version ProQ.

So far my own smoker has not been started, but when it is being done i will ask them if they can photograph stages to add to the excitement of this thread.

But in the meantime, i have some pictures of what their standard smoker is like. Remember each unit is made for the customer, this is not some company with a pile of stock. I know a lot of the members here probably get as excited by Stainless Steel as i do, so i thought i could share some pics now before i share the ones of my own smoker.

As you can see his standard model has 1 door. But he just completed a 2 door model that is a dryer/smoker for a customer. I will see if i can get a picture of that from him.

More interesting pictures as we progress. I have started this thread a little early perhaps, but i hope the pictures are satisfying enough for now.
 
Looks excellent quality and local too?  Can't beat it!  Look forward to the actual build!
 
Locally made in Thailand, by Thai factory, but under supervision of a wonderful American who lives here full time. He is very much about the details, making sure each unit is completely perfect.

Certainly not the cheapest smokers on the planet running from about $600 for 200 grade and $750 for 304 and add a little more for 2 doors, etc. They even do them in marine grade SS for those who must smoke on the beach (god knows what that costs). But for me i was staring down the barrel of $300 for the SS smoker i wanted (a single door from Weston), and another $300 to ship it to Thailand, plus taxes, plus import duty, plus customs broker fee... and what do you do if it's busted or badly dented at the end of all of that, Go Postal!

I have sent one of my SS Wire racking shelves to the factory so they are working with the exact shelves i will put into the machine.

The spec for my unit is now confirmed, it is much the same as i described earlier with additional shelving capacity.

* Stainless: 304 Stainless
* Doors: 2
* Height: 90cm (36")
* Width: 52cm (20.5")
* Deep: 43cm (17")

* Shelving Capacity: 10 Shelves

* Shelf Distance Fully Loaded: 5cm

* Stainless Steel Trolley with locking wheels.

The machine should be delivered and smoking in about 5 weeks, i am now ordering brines and bacon hangers and and and and and.

Here is an image of a double door unit that was made for someone else. This unit is taller than my unit will be, i think he said it's a combo dehydrator/smoker, you can see a fan on the top i think. You can see they pay real attention to the door seals, so i expect my smoker won't leak any smoke and should maintain it's heat very nicely.
