This morning I got my WSM smoker in from amazon and I'm going to attempt my first rack of ribs. I ran to the butcher and bought two racks of St. Louis style ribs, trimmed them and pulled the membrane. I am about to work on putting a rub together and tend to the smoker. I'll post as I go, any advice will be appreciated.
