Couple things.....

Your "Venturi Smoker" looks to be made of galvanized metal = Not Good!   Zinc fumes can be dangerous!!

Oversmoking causes a bitter taste on your meat

Venturi Type Smoke Generators are quite easy to make, but if not operated correctly, generate nasty chemicals like creosote. 

Just because you can make smoke, does not mean it's good quality smoke

You'll soon notice a gooey substance that will clog the exhaust tube of your venturi smoker

The box looks cool!

Use some expanded metal and angle iron to make some racks

Stay away from any galvanized metal in your smoker!!!

Todd you are right but the key words are "if not operated correctly"  I use one and my exhaust pipe stays dry as a bone. 
 
Hi guys I've decided to convert my smoke house into a biltong/smoke house hehe.  I've had little choice because the box has many design flaws and just wont function efficiently as a jerky smoke house.  Its still not finished but i'm doing a first batch of biltong atm.  It has been 24hrs soo far and im worried about temperature as is was 26c today and will be 31c tomorrow.  I left the box in my open shed where it was warm, im also worried about this but have no where else to put it.  Ive also added a 240v fan to the box but have not used it yet.  Should I turn it on or is it better to leave without it? It is on the side pushing air in atm (pls see pic) but should i put it on top and use as an extractor instead?  I have 2 150w flood light in box and have placed them upside down.  It heats the steel underneath and distributes well, its not as hot as you would imagine when upright.

Did you use Safari mix spices for your dry rub on ur biltong ? I grew up in johannesburg South Africa

Biltong was discovered in South Africa and I have eaten it to this day , enjoy ur biltong , my mouth is watering

I made my own vinegar bath and coriander/pepper/chilly rub.  We will see if the meat lasts the next couple of days and doesn't go off...or get eaten!
What part of the country do  you live in ? as long as those heat lamps are on and you have ample air circulation,

I dont see why you cant eat your biltong withing 5-7 days depending in which state you live in the colder the

state the longer it may take, cant you put the biltong box in ur garage ?
 
Nope, im Australian....from Victoria which is down south.  I think I first heard of biltong from this forum actually.  Here's a pic of first batch biltong finished.

Took about 4-5 days.  5kg of meat eaten within 2 days.
