So I'm trying to get my temps down and with my new regulator/needle valve assembly the temps get to 200 and I can hold them there as long as all my vents are open. My question is, is my 10psi regulator assembly ok to use with this smoker? I don't know what the original is but on high it is high but reasonable. With my new one, if you open he regulator, the flame looks like a turkey fryer. Seems dangerous. What say you?

No, lol. I just turned the knob up playing with it and it has a lot more capacity than needed. At 200 or even 300 the flame is fine.

Then I would say it will be fine as long as you keep the temp down where you want it.

Mine will put out a pretty big flame on high also and get the smoker up over 400* but I never use it that way.

I think you're fine and I'm happy to hear you got your problem fixed.

Me too. Got to eat 8 lbs of pork butt before throwing something else on!
