In 1.5 hours of the (3) of the 3-2-1 method with a rack of spare ribs now. Temp is holding at about 225.

Have a question about using apple juice or apple cider vinegar, which one or does it matter?
 
I did it!

They came out great!

Little lacking on the "kicking your ash ribs" but damn good just the same.

Looking good.  I don't spritz anymore but when I foil I use a 50/50 mix of apple juice and cider vinegar.  Keep it up, you'll have the drum dialed in, in no time!

Now the only and I mean only reason I pulled this off is because of the site and the people here.

I not only build my own smoker that worked like a charm but I smoked a great tasting rack of spare ribs the first try.

I have never met a bunch of folks more willing to help each other out in all my life.

Keep working with that drum...it's an amazing smokin machine!  You aren't kidding, this site and its members are some of the finest folks out here.  I first tried smoking almost 30 years ago and became discouraged and quit after a few attempts because Al Gore hadn't invented this internet yet and at the time I didn't know anyone who smoked.  When I found this site a couple years ago, kind of by accident, I too was amazed at the amount of information sharing and the willingness of folks to help out.  It sure knocked the learning curve down to nothing!

Didn't he also invert smokers and charcoal to boot?

My next smoke will be a fatty then maybe a pork butt.
