A new member who tried to smoke pork butt last night and got way too much smoke.  Tasted the wood and not the meat!!  Way too salty and very disappoiting. I have a Brinkman smoker and I cleary don't know how to use it.  Any advice would be greatly appreciated.

How much wood did you use?  What kind of wood did you use? How did you start and maintain your fire?  Answer to these questions can get  you the results you need.

I recommend starting a smoke log so you can remember what you did and what the outcome was.  Believe me in a few weeks you won't remember.  There are examples here and on other sites.  I use an excel spreadsheet.
