cool day here , only getting up to 107 today. This is 2nd time using wing sauce and smoking the wings but
first time injecting them with the wing sauce. S2K9K did a post on injecting wings so I stole the idea from him.
smoking them on my UDS . I always put my temp probe on each side of the grate. I can have a 50 degrees
difference from one side to the other. So I put a water pan under the top grate. 40 minutes into the smoke and
the temp has been within 5 degrees . so will be using some kind of baffle from now on. going to try a pizza pan
with hole in it next time to see how good that works. If I stick with the water pan I'm going to fill it with sand and
foil the top.
I injected the whole chicken with butter/garlic/rub mix.

started out with the temp around 230, now 45 minutes into the smoke the temp is slowly going up at 250/255
I have the ball valve wide open and one cap off. i'm going to get the smoker up to 300 and finish it off on the higher heat.
also have baked potatoes on . after the chicken comes off the BB ribs will go on.
