Hello everyone!
I live in the Dallas/Ft Worth Texas area. I've been smokling meats for two years but not many times during those two years. I'm still learning the ropes and trying to figure out what I'm doing. I am looking to learn about all areas of smoking. I've enjoyed cooking on a BBQ grill for many years and hope to become good at smoking. I love watching the TV show "BBQ Pitmasters" and actually record them and watch them over and over making notes and trying to figure out what they are doing to their meats.
I started by purchasing a wood smoker from Academy, its a Char-Griller and it is the trio model. Has a gas side and a charcol side with a wood box attached for smoking. I tried a vertical electric smoker many years ago and it was a disaster and I ended up returning it to the store I bought it from.
I'm looking forward to reading and learning from fellow snokers on this forum.
