I'm smoking a few briskets today and having issues with my chip pan.  I have a GOSM that I modded with temperature control for the gas.  I am using the stock chip pan with a tin foil cover with 6 pencil sized holes poked in it.  It is filled with a mix of mesquite chips and hickory chunk.  After the initial thicker smoke, I got 2 hours of good smoke, then it just quit.  I opened the pan and have a bunch (just a bit less than i had put in) of black charcoal looking chips/chunks.  No smoke, no white coals, no ash, nothing...just black wood...and NO smoke!  I have my flame set to medium and it cycles on and off in 2-3 minute cycles.

I added more mesquite chips and it started to smoke a bit again, but what's up with the charcoal looking stuff!  Any help would be appreciated, because I will run out of chips/chunk if I have to add every 2 hours like this.  Seems like i'm not getting a good burn...too hot, too cold?????  So confused!  Thanks in advance!

My GOSM does the same thing. I think it's like Mossy said, not enough air. The propane burns all the oxygen in the smoker, same reason  why the AMNPS won't work in propane smokers. I have to take the pan out every hour or two and stoke it up and let it get some air or add another chunk, then it will start to smoke again.

I got tired of all that and added an exterior fire box and now use an AMNPS and get 10 hours of smoke without touching anything!

Thanks!  Will try removing the foil and using the stock cast iron top.  S2K9K, interested in hearing or seeing more on your external fire box.  We have discussed it, but haven't pulled the trigger yet.

Thanks again!

It's not real pretty but it works and didn't cost me much to make:

Thanks for the threads...great work!  I completely removed the top from the pan and it's working ok, but not great.  I see a mod in my future.

If you are interested in using an Amazen-pellet-smoker here is some good reading, post 8 has some good links:

But before you jump on the AMNPS I have seen a couple of people here using Todd's new Tube smoker with good results in propane smokers:

I think the Tube just might be the way to go with propane. I just wish it had come out before I modded mine but mines working good so I'm happy!

Thanks for all the help!  The brisket finished nicely...had to completely remove the lid for the chip pan and it smoked pretty good.  We already have the tool box pulled off the shelf for the external fire box and are beginning to cut it...thanks for the inspiration.

Add more chunks, 2 hours is a good amount of time for chunks.  I have my flame set to medium and it cycles on and off in 2-3 minute cycles.

Then get more wood, and remember you don't have to infuse smoke the entire cook..  Seems like i'm not getting a good burn Yes you are...too hot, too cold?????  So confused!  Thanks in advance!

I read this thread several times and maybe I'm missing something here, but sounds like you got a perfect burn from your wood.

This is what you want

This one has a tiny bit of life in it, notice the brown on the piece to the left.

My last smoke I got three hours of TBS from these and there's still a little life left in these.

These chunks can be saved and used as lump.

I checked out the tube...i'd like to go with longer smoke times, since I'm kind of lazy (hey, at least I admit it)...I think we will try the EFB idea and go with the AMNPS.  We are also going to try the EFB with a chip pan that has some charcoal in it, along with chips.  We'll see...half the fun of a hobby is discovery and invention, besides the test subjects are generally pretty tasty :-).

Thanks All!

I did the charcoal and chips in mine before I got the AMNPS and it worked good.

Let us know how it turns out!
