I am going to make my 1st breakfast fatties. I would like to smoke them today, so they are ready for breakfast in the morning. I have a couple questions.

1. After they are all ready, do I have to refrigerate them for a period of time before smoking?

2. What would be the best way to re-heat them tomorrow morning for breakfast?

Hey Tim,

Breakfast fatties are some good stuff. After I have mine all rolled and the bacon weave on them, I wrap tightly in plastic wrap and into the fridge for an hour or so to firm it all up again before smoking them.

For re-heating, I slice and lightly fry the slices in some butter, just til heated through. I'm sure there are other ways of reheating, I just never have looked. I'll bet you could wrap in foil and reheat in the oven too.

I usually make breakfast sammies out of mine. Lightly fry the fatty slice, a hard fried egg, cheese all on a toasted/grilled bagel or English Muffin. 

You could even smoke them in the morning before breakfast, they only take a couple hours or so.

Thanks Alesia...we will have to leave early in the morning...so they just hit the smoker now!
 
Heading into the smoker @ 240 and the AMNPS is putting out perfect TBS! Finished pic when we slice them up for breakfast in the morning!

A little over 2 hours and INT of 165...out of the smoker. Kids could not wait for breakfast...so we had this for dinner.

This was a hit and there will be more fatties in our future!
