newb with a char-griller duo with sfb

Hello all this is my first day with smoking. I got my char griller today. Assembled in no time. Looks really good. I also seasoned it tonight. My wife fried up some bacon so I used the drippings to coat the grates with. I learned alot about my smoker whilst seasoning it. I wanted to stay around 200 but settled between 255 & 260. I have the sfb so I flipped the charcoal grate in the cooking section upside down to act as a baffle. I also noticed that I was only getting roughly 20 mins of smoke time. I plan to do my first smoke tomorrow with some chicken. Any ideas on the temp regulation and the smoke time? I was using hickory chunks and a little cherry. Had maybe five handfuls of charcoal.

Hey, Aaron. Welcome to the forum. You'll get lots of help on here from some very knowledgable and helpful folks. The only thing I would suggest for you, since this is your first smoker, is to be patient. It'll take you a little time to learn how it works best and ways to improve it. My first time smoking with my own new SFP (OLP Smoke Hollow 4-in-1) was very frustrating. I had a lot of trouble controlling the temperature and it tested my patience. But stick with it and it'll be worth the effort. Have fun and good luck!
