Today I smoked my first chuck roast on a weber kettle. I just got it, do not have much experience using a charcoal grill other than steaks etc. So I thought i would attempt to smoke on it. I found on another smoking site how to arrange the coals for a long smoke. I brushed the roast with olive oil, added Kosher salt, blk pepper, onion powder and garlic powder. I used Chef Jimmy's cook times and also made his Au Jus. It turned out great!
Kingsford Charcoal and Hickory Chunks
Chuck Roast and vegy pan for underneath
Vegys on for 1 hour, then add beef broth mix per Chef Jimmy
Roast over Vegys
Perfect temp., as it went on the temp stayed around 250* and never went higher untill I foiled, then it reached 270*
trying to show some smoke, my camera couldn't see it
This was the end of a 7 hour burn time/smoke
sliced a piece to show smoke ring,,,next pic is better
All cut up, and it tasted great! Dip in the Au Jus or mix it in and it was great!
