Decided to finally do a pork loin. Cut a slit in the center and stuffed it with sautee'd onions, mushrroms and spinach along with cubed provolone. Injected it with a butter and apple juice combo. Blasted it with my standard rub, then wrapped it with 1/2 lb of maple bacon and set it in the smoker with plum and apple at 250. I took about 3.5 hours to get to 145 then was set to rest for 45 minutes while we prepped the rest of dinner. The results were great. Probably the juciest pork I have ever had. The stuffing was good, but lacked some flavor. Should've used a tangier cheese like feta or goat. Would skip the bacon next time too, didn't allow the smoke to penetrate as much as I liked, and we had ABT's anyway for the bacon taste. Enjoy the Qview!
