Ever since I bought my smoker, I've been wanting to cook a meatloaf. This last weekend I finally had time to give it a go. I have made meatloaf before, but have only cooked it in the oven. I used the same recipe I have always used, but thought I would cover it in a bacon weave. Never done a bacon weave before, so it was my first time for making that as well.
Here's a shot of it before going into the smoker.
The finished product. I cooked it at 250-260 degrees for about 4 hours, and used a combination of cherry and apple wood. I pulled it at 162 degrees.
All plated up with some garlic mashed potatoes and gravy.
The meatloaf turned out great. Next time though, I'll smoke it without the bacon. The smoke didn't seem to penetrate the meat with the bacon wrapped around it.
