Yesterday I smoked 2 chickens and they were the best!  I also towards the end of the afternoon smoked some brats and my Hubby told me never ever to grill them again.  He only likes fried chicken...tasted the chicken and fell in love!  Thanks so much for giving me the "oomf" to try a bunch of things.  My daughters told me they LOVE my new hobby!  I do have pics this time! (any helpful hints would be great!)

We have a good friend who is an Executive chef and a competition BBQ guy.  He gave me his secret rub.  The main thing I can tell you is a huge trick for me...cause I don't like sticky meats.....is to take your brown sugar...put it on a baking sheet...bake is for about 30 minutes at 300 degrees....then grind it to a powder.  Its not sticky and is wonderful.  Other wise it has a bunch of the same ingredients from the recipe that I bought here.
 
 
No I didn't brine them.  Our BBQ champ buddy said you don't want to brine poultry if is its going to be cooked at low temps.  If "grilling" or "frying" brine is the way to go. Just learning as I go along...and having a ball.  I have smoked something each weekend since I bought Elvira.
