...heheh...that title almost sounds dirty!
anyway..i did my first tenderloins today on the smoker.
i used some toothpicks to make the small end kinda tuck into the big end to help keep it moist. i didn't have any bacon, so i was a bit worried about it over drying.
slathered w/ olive oil and seasoned with some salt, pepper, paprika, sugar, br sugar, garlic and onion powder and a couple of shakes of cayenne pepper.
popped on the smoker @ 225ish
30 mins after i had put them on, i sliced an apple really thin and flipped the loins and put the slices on top. not sure if it did anything as far as taste or moisture, it was just an idea.
at about an 1.5 hrs, i.t.'s were around 130ish on both, so i took em off and foiled them both...no apple slices.
15mins later probed at 140...i let them ride for another 15-20mins until i.t.'s were about 150-155ish.
let them rest for about 30mins
hacked 'em up into some slices...
...the foil packs has some nice juices inside that i just drizzled over the slices after i sliced it.
hands down the best pork tenderloin i have ever eaten...! a bit on the spicy side, and really too spicy for my grandparents, so i'll have to tone down the black and cayenne peppers and get some sweeter paprika, but the taste and tenderness was dead on! shoot....who needs bacon?!? lol
