Well, I got the green light from the wife to buy a smoker for Fathers day.  I have decided on the 18.5 WSM.  I will be picking it up at ACE tomorrow and plan to smoke a brisket on Saturday:)  Can't wait!!!!

Question - what will I need right out of the gate...  let me know if I'm missing something and if you recommend a certain product;

Bag of Charcoal

Some wood chips (probably go with apple)

Food temp probe - will any do?

Injection syringe

- accurate thermometers

- beer

I would get a Maverick ET-732 for a thermometer, it will cover both your grill and internal meat temp. Also if the WSM comes with a thermometer on the hood I would take it off and check it for accuracy (boiling water 212º). Most of all have fun, otherwise the hobby isn't worth it!

Thanks!  I won't have time to order the Maverick, so I might just try a lower cost one to get me by for a little while. 
 
  • i would go with wood chunks instead of chips. you will get a long smoke time from them and you do want to keep the lid closed as much as possible
  • review the minion method.bury some chunks for longer smoke.
  • mop or spray bottle
  • maybe some high temp gloves to handle the meat if you have to move it
  • make Chef JimeyJ's JJ Aus Jus
 
Good suggestions dewetha, as I don't have most of those items:)..  Picking up the WSM tomorrow morning and will get it built and ready to go for Saturday.  I think I will have as much cost in the "extra" stuff than the WSM is going to cost...  Looking forward to the experience though..
