Hey y'all, this is my third attempt at posting in the "Roll Call" forum. Any how a little about myself. I live in southeastern NC, I'm married with one son. I started venturing into the smoking world about 5 years ago. I started out with a Bass Pro Shops vertical smoker (which I purchased 1/2 price race weekend) and its "snowballed" from there. I've done everthing from Butts to Chicken to Veggies and even some fruits. My loving wife allowed me to purchase a Brinkmann Trail Master Limited Edition for my birthday back in April so my venture is still changing. I'm trying to get accustomed to using the offset cooker. After a few mods that I found on here I think I gained some confidence in myself. I've added hi-temp rtv to all cracks on the cooker, built a custom charcoal basket and debating on whether or not to convert the unit to reverse flow.
