Going to try chicken again.  Last time it looked fine but I had no idea what I was doing and no clue as to times or temps.  I actually chose not to eat them LOL.  this time after more reading and after having a few Ribs and Shoulders out of the way I hope it will be ok.

Here are the quarters with the rub on them.  I chose not to brine this time since I just decided to give it a go and dont have enough time before I want to smoke them.  I will brine them next time.

The rub is a mix of things that sounded good.  I will let you know how it turns out and post a pick.  (OK if it turns out ok I will post pics)

OK the Rub Mix of two store rubs worked great the Quarters turned out AWESOME!!! No problem eating the chicken this time HAHA

5 Quarters 2 of them were glazed with Jack Daniels Hickory Brown Sugar BBQ Sauce for the last 20 or 30 minutes of the Smoke.

The first two I pulled out

Thanks to everyone who has posted on how to smoke Chicken the information in the threads really helped.

The Chicken was
Rubbed with Combination of McCormicks Grill Mates Chicken Rub and Sweet Mesquite

Then was Smoked

at around 300 Degrees using apple wood

1 hour then sprayed with apple Juice
1/2 Hour Sprayed again
1/2 Hour Sprayed one last time and two glazed with BBQ Sauce.

1/2 Hour later out of the smoker and allowed to rest while the Slaw and Macaroni was made.
