Help! Spare ribs

I cooked St Louis stle ribs yesterday following the 3-2-1 method. i have a chargriller pro w/firebox, i smoked them at 250 degrees. When i pulled them off they had a great flavor but they were too tender and fell apart. What changes should i make?

The biggest impact on Fall off the Bone is Foiling time. Reduce the foiling time and add it on the beginning of the smoke time...JJ
 
Yup... change it up to 3-1-1 or 3-1.5-1. Just keep tweaking the foil time till you get what you want..... OR..... go with no foil. If you go no foil lower your chamber temps to 225-240 and use the bend test to check for doneness. The bend test is when you pick up the rack approx. 1/4 to 1/3 from the end with a pair of tongs and lift it up off the grates, if the rest of the rack bends down 90° and you start to see the meat strands pull apart a little you are done!
 
thanks for the input, i tried again Sunday and they turned out much better. 3 hours naked 1 hour covered and 1 hour naked. These ribs turned out almost perfect. when i cut the ribs they tore a little only due to the bark on the ribs. I am going to give them another try this weekend and i will post some pics this may give a better example. Thanks for everyones help.
