1st whole chicken smoke on new MES40

This is actually my first smoke on an electric smoker. I think I can get use to this. Started out with a couple of birds since chicken is relatively inexpensive and well if it messed up...no harm no fowl??? I did a 12+ hour brine in Sweetwater Spice Co's Lime Jalapeno Bath. Ran the MES40 up to 275. I placed birds and smoked with pecan chips. They smoked for just over 4 hours to an IT of 165. To me they look smell and tasted AWESOME! I am really diggin this electric smoker!

That looks awesome.  I am licking my lips looking at them.  I will be doing the same thing here shortly.  Putting a few birds in a nice brine overnight and then smoking them up to make pulled chicken tomorrow.  

Oh and I see what you did there :-D
 
I will say that I like the ease of the electric smoker...seems a bit more stable IMO. The chip loading every 45 minutes or so wasnt too bad for the short 4 hour smoke. The temp, I wasnt too concerned about since birds are cooked at higher temps anyways. I will say that before I branch out on different meats, I already ordered the AMNPS and Maverick ET732. I expect them in soon. I will let you know how the progress is coming and I am sure I will have some questions.
 
When I pulled them out of the smoker I wrapped them in foil. I was waiting for the wife to get home from work so I wrapped them just to keep them warm. When the last photo was taken they hadnt been wrapped yet. I had them in foil maybe 45 minutes.
