I've got the day off today so I decided I might as well cook up somethin' delicious for lunch. I had one 3lb tri-tip left and my lovely SWMBO (she who must be obeyed) picked up some chicken leg quarters on sale at the store the other day when they were on sale (I've never cooked leg quarters before .... man are they HUGE!).
As I've never cooked the leg quarters before we decided we would try a different rub combo on each piece. The first piece got franks hot sauce and some kickin chicken seasoning. The second piece got garlic salt and pepper. The third piece got Kinders tequilla lime rub, and the last got Webers kickin chicken. Wrapped them up in saran wrap and let them sit in the fridge over night.
I woke up and pulled the chicken from the fridge so it could come up a bit in temp before it hit the grill, and lit the fire. I had to chase the temp a bit in my vertical smoker today. Started at only 200, so I lit another chimney full and dumped it in. Temps hit 310 so I had to pull out some of the fresh lump. Temps are setled about 250 now, and the chicken is on.
More to come.....
One hour in now, getting close to dropping some tri-tip in the mix too!
Took about 4 hours or so and this is what I got. I'll let you know what was the favorite after we eat!
