First time spare ribs (trimmed) on brand new WSM 22.5 (Q VIEW!)

I received the WSM 22.5 on Friday for an early FIRST fathers day  (son is 2 1/2 months old) from my wife!  

I trimmed the spare ribs down this morning (forgot last night) and rubbed them, left in fridge for 5-6 hours.  They were smoked at 220-240 using a modified 3 - 2- 1 method.  I did 3.5 - 1 - 1.5 . I added apple juice, honey, brown sugar, and margarine when I foiled them and glazed with Sweet Baby Rays. They turned out extremely delicious but I think next time I will leave them in the foil a little longer.

Thoughts?

Congrats on the next toy. NICE looking ribs.  I did some StL cut spares Memorial Day weekend per 3 - 2 - 1 @ 225* - 250*.  I think they were a bit TOO tender for me.  So...my next StL spare cook will be 2.5 - 1.5 - 1 @ 225* - 250*.  Gotta LOVE the WSM!
 
They look fantastic!  Were they not-quite fall-off-the-bone, more like a little tug-off-the-bone?  That is perfectly acceptable, I actually prefer them that way.  Last ones I did I didn't foil them at all, I'd brined them first with a cure and they were perfect, just a little tug and they melted in your mouth!  Great job, and good-looking supervisor too!

Thank you to everyone for the kind comments.   They were 'tug off the bone' but I was extremely pleased for my first WSM experience.  I think it makes me look better than I really am!

I LOVE my WSM. Its a great unit I must say. Yours will get better as you get her seasoned -*and so forth. I do not see one so I will comment that you need a thermometer as well. My dome one actually worked pretty good the first few smokes, but as time went goes on, it takes it a while to move up to the correct temp. Shes in slow motion I guess lol. Even though the factory one reads Ok after about an hour of smoking, I still rely on the therms I bought. This week Im going in for a maverick ET-732 dual probes and give that a try

All in all you have a great unit and the ribs look great. Congrats on everything!!!!!!!!!!!
