doing my first roast beef tomorrow.  Have them rubbed with steak seasoning the plan is to smoke with hickory at 225 till they hit 135. they are each about 4 lbs.  Haven't done this before, how long am I looking at for these to cook? approx. how long per pound for beef? Also can someone shoot me the link for Chef Jimmy's Au jus.

Thanks,

David

Wow looks like it cooks quick. I also found the recipe. I will post pics tomorrow.

Maybe an hour per pound? We mainly use mesquite and rarely oak on beef(but have not been pkeased with the way hickory makes beef taste). Its probably just a personal taste issue.
