So for my first smoke with my new MES 40 I chose a 5lb Butt for pulled pork, and some baby back ribs.  I started the butt about three hours before the ribs so that I could try and have them finish about the same time.  So I took a couple pics for Qview and thought I'd post them.

Second pic is hard to see because its dark outside and I was too lazy to provide light and taking the pic with my cell phone which has no flash.  Battery is dead in my digital camera...lol

Well the Butt took a whole lot longer than I expected.  Almost 12hrs.  I'm not real sure why, the IT got to about 154 and stuck there for nearly 3 hrs.  I was using two separate thermometers besides the built in one on my MES, and they both read 225.  In the end I pulled it and placed it in the oven for about an hour to finish it off.  Despite my frustration with the very long stall it still turned out wonderful.  Unfortunately, my wife pulled it while I was snoozing and didn't take a pic of the finished product.  Oh and the baby backs came out perfect, used the 2-2-1 method I read about on the forums and it worked great!

Butts are kinda like that.  They're done when they're done.  I use 2 hrs per lb and then add 2 hrs to the result for a fudge factor for that very reason.  In your case using my calculations 12 hrs would have been in the plan.

Welcome to the dreaded stall, next time don't get frustrated just ride it out. Patience my friend! I think the stall is one of the hardest thing to learn/accept in smoking, I know it took me awhile to just relax and ride it out, now I don't even think about it.

I'm glad it turned out good for you and you got through it.

Thank ya'll, next time I'll plan it a bit better...lol and hopefully have more patience.   Thanks a lot for the encouragement.
