So I posted this over at the smoke ring but I figured Id post over here and beg forgiviness if there was any over lap... Here is the current project.

I know that I had mentioned that I was going to be getting 2 of these cabinets from work awhile ago and I have one home finally the 2nd should be joining its mate in the next couple weeks.

Cabinet measures 60"wx28"dx67"h and the top of the doors its actually almost 7' at the back where the 8" stacks come out.

So here's the new build... I can handle the mechanical side of this build as it's literally going to just be insulate and skin it then add some racks.. The part that is killing me is the electronic side... I know what I want it to do but when it comes to programming the PLC I am freaking lost...

So the plan here is to put 1" of insulation on the back and sides then skin it with either 16 or 18ga SS. I had thought about doing the lower half of the doors but havent came to a final decision on that yet.  I will be splitting the cabinet down the middle between the doors with either a single sheet or a insulated skinned wall. 

I plan on building a pellet burner for each side with a chunk of 3/4" steel as a heat diffuser above the fire pot.

I currently have 1 temp input module that will support up to 4 probes I was planning on adding a second module and running 4 probes per side. PLC would control fan speed, auger feed base on averaged temp inside each half of the smoker.

There was and is alot of trash in the bottom of the cabinet as some people thought it was a good place to toss their crap rather than walking 5' to a garbage can

Kind of hard to see from this shot but there is a 1" offset from the edge of the door to the inside edge of the cabinet. Perfect for insulation

10" touch screen HMI. one of the few things I've been able to program is the annimation for the screens.

Inside of the controller cabinet. I had to tear out all of the 208VAC components as they weren't needed. I will be setting this up to run off of 110VAC with a 24VDC backup in case I lose power during a smoke.

What do you guys think? Anybody out there know anythign about programming PLCs?
 
I don't have a clue myself, but I'll bump this up for you so others may be able to help!
 
Well I got the other 2 cabinets home this afternoon... Will get pics of them up this weekend at some point... The original intention at this point for them is to put them on the end of the big cabinet with a gas burner under them to use them as a warming/holding box.. but the more I look at them the more I think they would make a great vert. smoker...
 
Well I think I have the design finalized.. it's going to be tight getting between the two smokers but if I widen the trailer it will be much better...

Nice looking boxes!!! It looks like it will make a fine smoker….1 question, why are you going so heavy on the stainless steel on the inside? By far I believe in bigger is better, but unless you are getting this material for free…it is going to be expensive….you can go down to 20 or 22 gage and still get the stainless durability, save some money and have an easier time at fabricating it….. Maybe I’m not getting the full reason of why??? …… SB
 
I hadnt really thought of going that thin on the inner walls. My welding skills are decent but I dont want to spend alot of time having to plug burn through holes so I went with something that was closer to the cabinet thickness.

The skinning material Im going to have to buy but, the two smaller cabinets have about $2k each( wholesale)  in high purity SS valves that Im working with a buyer on.. That should offset at least some of the cost. I estimate that its going to take about (5) 4x8 sheets to skin the inside of each cabinet.

I called one of my material sources, he wants 350.00 a sheet for 4 x 10 x 16 ga stainless.....I'm a Sheet Metal Master by trade, 22 years now, and I was just thinking that you could make it out of a thinner material, make it so that slip together and not have any welds, but that is only because I have a break that I can bend the material with. I know that there has to be a fabrication shop near you that would be able to do this work. I’m not trying to tell you how to handle your build, I was just  giving you another option on how you may be able to do it and save a few dollars. Thats a Koyo PLC.   It's available from automationdirect.com. 

The good things about them for you is that parts are available and pretty cheap relative to other PLC brands. (Like Siemens and Allen-Bradley).  Also good is (I believe), the programming softwares for both the PLC and the HMI is free and downloadable on their website.  I haven't done any PLC programming since I changed jobs 5 years ago, but the Koyo's were relatively straight-forward from what I remember.  

It looks like you are in for a really fun build with all of that hardware.

All the advice is more than welcome... And one of the reasons we all hang around these things.. We are such a diverese group of people from all walks of life that we can share our experiences and thoughts. I only want to build this thing once.. at this point from a cost stand point I'm almost tempted to cut one of the cabinets up and use it as a donor to skin the other one.. but that seems like such a damn waste of a perfectly good cabinet.

my concern with bending and slip fitting would be that since I'm insulating on the inside I would need to seal the seams some how, Also the grating is going to be mounted to the "skins" so I'm unsure of the sheer strength of the SS with a fully loaded rack of 2-4 butts.
 
It would depend on how you are planning on installing the racks. You are only looking at 30 or 40lbs that not much depending on how you fabricate it…..It would be ashamed to destroy one of the boxes for a skin….I would think you may be able to do some horse trading with it if nothing else….but that is just the way I think…If I can help feel free to ask…..
