What is the best type of Pork Rib meat to use for competition?  Has anyone used Berkshire/Kurobuta meet in competition?  Also, where do you all get it, because I have not had much luck getting good pork meat near Wichita KS.

I don't do comps but I did some Berkshire pork ribs and quite frankly couldn't tell the difference than the spares I get from the grocery down the street that I trim to St L style.

Hello BBQ Kansas Kid!

You could try googling it and see if anything comes up near your area.

Would you mind heading over to Roll Call to introduce yourself so we can give you a proper SMF Welcome?

Could you help us out by updating your profile to include your location (State is fine), it helps when answering questions or giving advice to know what part of the world you are in?

Thanks

BAMA BBQ hit it on the head.  You can spend the extra money but you probably won't tell the difference if you can find decent ribs.  I would find a butcher and see if they could order you some Iowa Pork.  The SAMS by me carries it it and if I can help it it is all I buy.  I like thick ribs lots of meat and look for some fat when you look at them from the side.

i buy all of mine from the hyvee store here in mankato mn but idk if you have them over there i have been happy with the ribs from there

Are the ribs you purchase from Hy-Vee from the meat counter or the cryo-packed ones out in the cooler? I have a feeling that they may be the same. I have been wanting to try some ribs, but wasn't sure if they provided something different in the case vs. the self serve.
