Stuffed Pork Loin with lots of Q View

So with the help of my man Stan, and with some ideas from SmokinAl, I created one of my most unique smoked dishes. Now I  will be the first to tell you that it was okay. It wasnt the best tasting wise, and I did overcook it a little. I took it to about 155-160 IMT. And I should have taken it out at about 140. But it was still pretty good, and of course everyone enjoyed it. They are big pork fans, and I am not really a big fan of it myself :D But I enjoyed it. 

The first loin got marinated in italian dressing, with garlic powder, onion powder, salt and pepper. The second one was marinated in a caribbean jerk sauce, with salt and pepper. I cooked them at around 250 for about 3 1/2 hours. Used hickory, and oak. I like to try different combinations of wood to see what I like. And since I live in the south, I have lots of oak and pecan lying around so I can get some pretty good combinations. All in all it was another success and a great learning experience. I am trying to smoke something new everytime to see what I am good at and see what I know the best. So I am having a great time cooking and eating with the family. 

Isn't that what smoking is all about? Just having a good time with the people you care about? :D

Sorry, I laid down some spinach, then a layer of spicy Italian sausage, then some feta cheese, and lastly some provolone cheese, and then rolled her up.
