Low Fat Turkey Breast Smoke

I've been buying 2.5 lbs a week of local deli turkey for the family; running about $28-30 a trip.  Thinking of smoking my own turkey breasts for savings but curious about the low fat options.  Boars Head sliced turkey clocks in on average around .5-1g fat for 2oz; if I were to try to duplicate my own smoked breast what recommendations do you have for the skin? 

I'm going out to check out the stores to see what's in stock; it looks as though I'll find both skin and skinless breasts...is there any concern using the skinless breasts for lower fat results?  I see some of these are prebrined, maybe that's what keeping the breasts from drying out?

Brining the breasts will definitely help.  You can smoke them skinless; the outer meat will toughen a bit but still is perfectly edible (see my Dixee Chicks link in my sig line).  You can bone out several and put in stockinettes also.
