I'm brand new to smoking, I've just been a roast it or bake it kinda guy and recently I was given some smoked steelhead and was instantly hooked and determined to use any fabrication skills I posses to build my very own smoker lol, I caught a whole slew of trout and I've been told they're quite good to smoke so I'm going to give it a try this weekend hopefully

a hardy welcome from a fellow northwesterner. smokin fish is very addictive. i prefer a wet, teryaki style brine for fish. as far as equipment goes, any big box with a small fire will do. if you can keep a consistant temp of 160-180 and keep the fish off the direct heat you will do fine. dont forget to get the pelicle, an hour or 2 next to a fan will do. trout are great for practice before you try it on a delicious metal head. i used to use a double stack brinkman back in the day before i got lazy and bought the mes40. i had the brinkman gourmet on the bottom and the cheap one with the legs on top. the legs slide right inside the bottom one. best of luck and keep us posted.
 
 
Pelicle? Do tell lol

My smoker is a somewhat custom model lol, my fire will be in a seperate chamber though that way I can better regulate the temp, I'm debating dabbling in cold smoking also. I'll see about some pictures tonight. But thank you all for the warm welcome :biggrin:
