Sunday tip roast, and corned beef

Sunday was crazy windy here, but I hadn't smoked anything in a while, so I busted out the ECB for a Sirloin Tip Roast, corned beef, some drum sticks, and a rack of ribs.  Had to do some careful arranging, but it all fit.  I'll put the ribs and chicken under the other headings.

Here's the tip roast, used thick worsty and a rub my wife found online, not bad, kind of heavy on rosemary though.

Took it to 135 IT, and in a cooler to rest until dinner, sat about an hour.  Here's the finished sliced pics.

Next is the corned beef, this was in the freezer from St Patty's Day, so I rubbed that up with the same rub as well as the little package that comes inside.

Here's that finished pic, I did soak this for about an hour in ice water, could have done longer, man they come out salty.

Didn't get to make any sammies yet, that's for tomorrow, just not sure which to have first, the sirloin or a reuben.

(If I had my druthers, I'd druther have a Reuben, lol!)  Everything looks excellent!

Dan, morning...... Anyone that cooks meat to that IT ..... well, were friends.... it looks soooo goood....   no sides necessary....
