We have this little corner grocery/butcher shop..... I was shopping there the other day and there were these ribs
in the case... NOT PUMPED, NOT VAC-PACKED..... Au Natural.... They were beauties in the eyes of a Q-er....
French's mustard rub, salt, pepper, and a mix of spices..... Wrapped and in the refer overnight....
After 3 hours of Pitmasters Choice Pellets in the smoker at 215 or so.... Then they were wrapped in foil with a
splash of beer to braise for a couple hours....
Then the juice from the foil pack was put in the freezer to separate the fat.....
The remaining drippings were put in a stainless bowl and KC BBQ sauce, Yoshida sauce and Goya Mojo Chipotle sauce was added and heated to melt the pork glaze and mix everything....
The pork drippings gelled due to the collagen and other stuff Chef JimmyJ can explain....
He is the reason I save all the drippings to add to things.... If you do not save the drippings, it is time to start....
Amazing flavor bomb to add to stuff....
Now you can see why I picked up these ribs..... Talk about meaty..... MMMMM MMMM good and moist....
The flavor from the Pitmasters Choice Pellets is awesome....... The amount of smoke is perfect for most
folks.... Not over powering.... sweet..... delicious......
1 row of pellets for 3+ hours of smoke.... I dried the pellets in the smoker during the 1 hour 275 degree preheat...
Todd did a good thing when he designed this smoke generator.... The perfect amount of smoke for your food.....
As you can see, I have removed all the chip smoking stuff from my smoker.... No need.... I use the controls for
controlling the heat.... Todd's AMNPS controls the smoke.... What a perfect match....
Thinking about the AMNPS ???? Think no longer...... This thing is great.....
You know the food will be delicious by looking at the smoke....... Thin and Blue........
