Hey guys,

Quick question. I just bought a ceramic smoker. The instructions say to smoke with the top vents closed. I know from my WSM experience to always leave the top vents open. Are the ceramics that different that they are ok with the top vents closed. Just grilled some ribeye's and wow, they were fantastic. Hope the ribs turn out that good.

I usually cook with the daisy wheel open to some extent.  Even when cooking at low temperature (225-250 degrees), it's open a bit.  Bottom vent position seems to affect temperature more.
 
 
Thanks. I will try it that way tomorrow. At least that way I can get the temp probe wire out.
 
Yeah, I leave my top vent open as much as possible on my kamado kooker. When cooking at 225° I usually don't open the top vent much nor the bottom. I can't have much open venting to keep the heat real low. Every smoker is a little different so give it a whirl and see what your magic setting is...
