Butt Brineing

No need for rocket science, easy peasy brine.

Got this recipe from a forum member. Easy peasy butt brine

Here is the basic brine. Forgot  the white pepper/salt in the pic.

Brown sugar

Apple cider vinegar.

Added the pepper, salt, brown sugar and vinegar. Mixed up good. (spirits added later in bout 9 hours)

I'm going to inject some of the brine.

Submerge into the brine.

Cover/fridge. Will add the spirits later. Tomorrow rinse butt and rub down with dry rub before the smoker.

Took the butt out of the brine this morning, rinsed and patted down some.

Butt is smoking right along and smelling good. The guys building the 3 houses next to me asked when will lunch be done...LOL Not for awhile amigos.

Pulled pork, elbow noodles, mixed into bean with bacon soup.........WOOOHOOO

A couple of questions if you don't mind,

How long did you let it soak in the brine?

About how much did you inject into it?

Oh and one more, do those frogmats help keep the racks clean and are they easy to clean?

Brine soaked overnight. Added 8oz of the spirits the last 6 hours of the brine. Note i didnt use the CR, Got cheaper bourbon later in the evening.

Injected 4 times (8oz)

You will still have semi dirty racks, I toss the rack and frogmat into the dishwasher.
 
Thanks Rick! I've been thinking of getting some because I'm real tired of scrubbing racks.

I injected a butt once with Chris Lilly's recipe but after I was done I realized I forgot to add the water so it was almost pure apple juice, it didn't turn out very good, way too sweet. I think I'm going to try your method here, it sounds real good.

I'm glad you didn't use that good CR, that's for sipping!
