Thanks to this great website i was able to pull it off!

A friend of mine had asked me to smoke some meat for his house party, turn out to be 50 invited guest.

Arrived at his house saturday morning with my home made smoker around 8:30....and almost fell over.

He had 27 racks of baby backs and 10 chickens (5lbs). I could only fit 15 racks of ribs so ended up smoking baby backs (225 degrees )with a rub for 2 hours, then into the oven foiled with apple juice for 2hrs and onto the bbq for 20mins or so with sauce. The other 12 racks went on the bbq then into the slow cookers.

Now the chickens got brined with water, salt and brown sugard for 4 hrs..then into the smoker at 300 degrees until internal temp hit 170 (just to be certain) took almost 3hrs.

Got a standing ovation from the crowd.....best meat they ever had....everyone like it....only thing left was a few chickens....the rest was gone!

that looks great.. If you find yourself in that predicament again... ether use rib racks instead of laying them down flat (work great) and can get 3-4 times as many ribs on.. or stand 2 slabs on edge against each other (a teepee type deal).. other wise sounds like you nailed it... good job
