My wife requested rib roast for mothers day, so who was I to argue?  The roast came from my aunt and uncles farm in NE.

 Pulled out of the MES at 135 degrees.

Rested and served with ChefJJ's au jus!
 
That must have been Awesome because that looks like a Prime Grade cut, tons of marbling! I prefer the Chuck end like that it is fattier and  has so much more flavor than the lean Loin end. Hope you liked the Au Jus...JJ
