It's smoking I'm new to. The meats, the rubs, and woods ... In addition to the posts here, the major smokes get a home on my hard drive, and every smoke gets a written entry in my smoking log. Some say nice things. Others fall into the "major learning" category. 

I've visited the chat rooms a few times. It's nice to quickly ping the people and see what they say about ideas. Right now I'm working with a dissonance between brisket @ Fatz and a low slow brisket. If you like a Fatz/Applebees/whoever brisket (and that's OK, when I go to Albuquerque I always stop by Rudy's and get some brisket), what I'm doing and have seen done here might not be what you expect. I could be wrong.
