Hello, I am a new member from S. Illinois, down around St. Louis.
I only have minimal experience smoking meats and have only used a Brinkman charcoal smoker, until today when I bought the MES40 and ordered the Amazen pellet system. I am looking forward to learning all I can about electric smoking and enjoying the benefits of smoked meats.
I do quite a bit of hunting so I would like to cold smoke venison summer sausage as well if it is possible with the MES.
