Thinking about doing a pizza inspired fatty

Evening folks, I wanted some input on a fatty. I have never done one and have little knowledge of them. But from what i have read you can pretty much put anything inside of it. Anyhow my idea is to get italian sausage(remove them from the casing) and put lots of mozzarella and pepperoni and then to wrap in in bacon. I assume i would smoke it at 225-250 until 160? 

 

What i wanted to know is what could I add or do to make it really spectactular.

Also would it be recommended to use some rub on it?

Low and Slow w/TBS should take care of that.

Sure you can dust it with your favorite rub. I've done bacon cheeseburger and smeared the inside with A 1 sauce, so you could add some really good pizza sauce, onions, peppers or do a half sweet Italian and half hot Italian. Lots of options

You could also add some sauce and maybe some grilled onions and tomato's just to name a few - be sure to post up some qview

If you like white pizza (like I do) make a garlic alfredo sauce and put in it.

What ever you like on your pizza can go inside the fattie.
Can also wrap the fattie in pizza dough
