Hello Fellow Q'ers!

Hi everyone!

 

Since I have been browsing these forums for the last 2 weeks to get ideas for a special smokeout barbecue weekend coming up in just a few days, i figured I would introduce myself.  My name is Kevin and I live in the Hudson Valley region of New York State.  I really wanted to get into smoking since I love hosting cookouts for my friends and family.  I was recently given a Masterpiece Electric Smokehouse to learn on (its the 30" one).  So this weekend I will be having friends and family stopping in and out of my home from Friday thru Monday to hopefully experience some top of the line smoky barbecue!

 

The plan:

 

Friday - Two 5-6 pound bone in boston butt pork shoulders.  I will be using my own Rub, and South Florida Jeff's finishing sauce.  Personally I like my pulled pork sandwiches topped with home made cole slaw and carolina red bbq sauce on the side.

 

Saturday - Ribs!  I will be doing several racks.  Not entirely sure the exact rubs and sauces I will be using, more research for that, but I will certainly be doing a variety of them.

 

Sunday - Whole Chickens!  I really can't wait to make smoked chicken salad out of em and stock from those smoked bones.  Im just gonna smoke up 3 or 4 (depending how many fit in the smoker) and when they're done, everyone gets a knife and fork and just carve em up.  Leftovers are for the chicken salad.

 

Monday - Sausages!  Plus all the leftovers.  I am going to attempt a barbecue leftover pizza with stuffed pulled pork crust.  Will have chicken, rib meat, bbq sauce, red onions, and cheddar cheese.  Not sure how that will turn out, but the only way to find out is to cook it.  Oh and the pizzas will most definitely be done on the grill.

 

I greatly appreciate all the information you experienced smokers have contributed and I feel as though I have learned an incredible amount without actually smoking anything yet.  I will let you all know how it turned out, and if you have any suggestions, don't be shy!

Welcome to SMF! Sounds like a busy but tasty weekend, don't forget to snap some pics to share with us! 

Remember the guideline on your pork butts to allow approx 2 hrs per lb of smoking time and take to an IT of 205* for pulling. Keep it low and slow and you gotta have patience and not bump up the smoker temp to get them done quicker. Lots of info on here for smoking butts and there's an article on it as well.

Thanks for the warm welcome!  I updated my profile with my location.  What is this QView you are talking about?  I plan on taking many many pictures and logging all my results.

 

As for the pork shoulders, I plan on taking em out of the fridge around 5am, and onto the smoker around 6am.  I am looking to eat pulled pork sometime between 8 and 9pm friday night.  I read that entire 17 page post with meowie's pork shoulder technique.  I think I understand the time contraints as well as not to be fearful of the plateau.  I have nothing going on this weekend except smoking and grilling so when the foods done, thats when its done!

I've been trying to post a new thread for about a half hour now to document the weekend with the requested qview, but it keeps telling me that I don't have the permission to do so.  So let me know where it is I can post the weekend smokeout and I'll put it up!
