As I am building my smoker my father-in-law suggested I use a piece of duct sheet metal he has (which also happens to be the absolute perfect dimensions I am looking for) for a baffle plate in the cooking chamber. I'm thinking it might be to "light" of a material to use though. Any suggestions?

Thin sheet metal works fine... your just trying to deflect and re-distribute a large portion of the heat, not all of it.
..... BUT.... make sure it isn't galvanized. Generally a smoker won't get hot enough to off gas galvanized metal, but you don't really want to even take that chance. The stuff that off gasses from galvanize metal is very toxic.
