I am new to smoking and have purchased a MES 30". Cooked two pork loins for about 8 hrs, to internal temp of 160 as measured by Maverick T73. Had trouble keeping temp steady-wide range 208-240. Kwats4 what size aluminum tray W x L x D did you use. Also what brand name and at which store did you purchase it. Did the bottom tray have a hole cut in the middle like the top tray. I enjoy this forum and have learned very much about smoking with my electric smoker.
