This was my first time smoking turkey.  2 bone-in breasts (6.5 lbs each), 1 injected with Cajun, 1 injected with garlic / herb.  Smoked at 250, approximately 4 hours, apple wood, apple juice in the water pan.  Pulled at 160, and foiled from there.  It turned out awesome, nice and juicy!  Both were delicious, but my preference is the cajun.  Happy Smoking everybody!

Jarod , with poultry , it is good to go to 165*f (I know 5 degrees why???) , at that temp. for 10 to 15 min. kills off a bunch of nasty pathogens ,in the breast is correct , just for safety sake , go to 165*f.

And place any poultry under any other meat , the juice can carry a bug over to the other stuff.

thanks oldschool for the verification on the temp.  Being my first time doing turkey, i was searching around on other's threads for a good temp.  As i'm sure you are aware, there is a different answer on almost every one!
