I am new to smoking meats. I have been cooking on a Weber charcoal grill ever since I can remember. I have been brewing beer for about two years. My uncle brought by his smoker smoke some spare ribs while I was brewing recently. He left it at my house so I did a little experimenting of my own. I bought a 12 pound beef brisket and dove right in the head first. The meat turned out excellent! I invited my parents over and they enjoyed it so much that they bought me my own smoker. It is a master forge double door chacoal/gas smoker. I can't wait to start pairing meat and beer.
